Japanese (Fuyu) persimmons, or the soft and mushy persimmons? Fuyus are my favorite for eating fresh, but I use the soft ones for persimmon pudding. They could be blended up into baby-food consistency and frozen in the right amounts, I would guess. There used to be a wild persimmon tree near my house, but it is now gone. You just reminded me I should go foraging for a new tree. That will give me a reason to go for walks next week.Persimmon season is around the corner. Do any of you save persimmons? Lot of fruit goes unpicked and waste because no way to preserve
