Mfr date is not a big deal unless it’s excessive like 2 or 3 years.
I think the problem is when 3 year later they don't want to repair the tire bc they said it's too old by DOT date. If you were given a new tire, you'd actually have 6 years before they refused to repair it.
Our tire shop bases it on tread depth. In fact, they recently said that this would be the last repair because it’s in the yellow zone.
